We have been raising Galloway cattle for over 25 years. This breed was chosen for its great hardiness; Galloways are perfectly suited to the mountains of the Haut-Languedoc, in terms of soil, vegetation and climate.
We practise extensive farming, respectful of both animals and nature. Our cows live outdoors all year round, in herds, with the bull permanently present. They roam over large grazing areas made up of meadows, heathlands and peat bogs. The diversity of vegetation is remarkable, and the cows graze according to their needs.
Our cows eat only hay in winter and grass for the rest of the year. We have chosen not to fatten our animals: calves destined for meat production are taken directly from the pasture while still suckling from their mothers.
By knowing exactly what our animals eat, we know what we are eating. Our meat is simple, lean and flavourful, and the veal is naturally red.
